Une g\u00e9om\u00e9trie \u00e9volutive qui permet \u00e0 l\u2019objet de tenir soit sur la tranche, soit sur le flanc sans que la lame ne soit en contact de la table. La grande courbe dessin\u00e9e par l\u2019\u00e9pissure r\u00e9pond en \u00e9cho \u00e0 celle du bout du couteau, dont le profil est dessin\u00e9 pour plonger au coeur de la coupe. Un couteau balanc\u00e9 et \u00e9quilibr\u00e9 tout simplement !<\/p>\n<p style=\"text-align: justify;\"><em>&#8220;J\u2019ai d\u00e9couvert les couteaux de la fabrique Perceval de la mani\u00e8re la plus simple qui soit : sur une table de restaurant ! La simplicit\u00e9 et la grande qualit\u00e9 de cet objet m\u2019ont s\u00e9duit.
